Life Lately via Instagram/IPhone

Anyone else feel like this week has flown by!? Maybe it's because I've been so busy work-wise this week going to trainings off site and meetings, but I am lovin' it! Happy Friday to you all!

Thank you all for your comments yesterday about the Cupcakes I should make for my office. Now, my office only consists of about 5 people (including myself - our other 4 employees work remotely from home in 4 different states!) but thank you, I can't wait to post about my baking experience since I have never really gotten into it before too much besides cookies.

Same thing with crafting, I'm itching to buy a cheap dresser and re do it, and I found one on craigslist this morning for only $20! Might go pick it up :-) Now those that know me know I am not a good crafter, but I also have never really tried to craft. With over 120 something pins about DIY projects, I'm thinking I should give it a shot.

2. Soo funny catching one of the IT guys snoozin on the job yesterday afternoon! I printed it out and taped it to my boss' door for a good laugh. He snores loud.

Huxley and the Hairdryer

I am so glad it is Friday! It has been a long week working overtime and trying to shake a cold! Scottie and I don't have plans for this weekend yet, but we do have good news!

So last year, I moved into the apartment we're in now, but it wasn't the apartment we had signed a lease for. I mean, it was, but it was a handicapped version of it - so doors were wider, the bathroom is probably half of our house (that part I wasn't complaining about ;-)) and the counters were lowered. Because it was move in day, I was so upset but still had to go somewhere. So we moved in on condition that we could have a free transfer at any time with no admin or deposit fees.

Well, the market value for apartments has been insane lately, but finally this past month I found the layout I wanted and the location of our complex. Our complex is beautiful, white picket fences, dog parks, basketball courts, and greenery everywhere. We're also in a cul de sac on our own street. I absolutely love it! We got it at the same rent we're paying now (thank goodness, rents are over $100 what we're paying right now so I am grateful), and we move on my birthday weekend!! (Dec 8-10th) :) Yay! I am so happy we'll finally be in a normal non-awkward looking apartment where I can decorate the way I want to!!!

Anyway, that's really all I have for today. Making some delicious recipes over the weekend that will be posting up next week and a possible guest post so stay tuned!

As I get back to work, enjoy watching Huxley's new obsession. My hair dryer. (sorry it is kind of dark - late at night) - You would think he'd be afraid of vaccuum cleaners and hairdryers, but he is in full force taking this thing on! Haha, it is too funny. (Btw, yes. I'm sitting on the floor playing with a hairdryer with my dog. don't judge me :) hehe)

TGIF!! This week has been one fun and exciting week! I've gotten a lot of work done at the office and at home, I've started the longer walks/runs with my chunk-o-cuteness Huxley, and have cooked up some amazing meals/treats!!

Here are some of the highlights of my week:

Made some crazy delicious Chocolate Chip Pumpkin cookies for my sales team at the office, following along with my beautiful Italian SISTA Ashley at La Luce with her series on GIVING. You can see the cookie recipes here!

Huxley and I have spent some great quality time chillaxin' on the couch and going on our little runs/walks. He loves his new sweatshirt :) to see a hilarious video of him the first time he wore it, click here.

2-3 weeks ago, Scottie ordered me a beautiful dining room table as I've been wanting one forEVER and I've never had one. He is the sweetest!! I got it earlier this week! You can read a post (his first blog post!) about me here.

At work we've been having contest after contest for different softwares or laser printers to sell, and this week alone I've won $200 on my paycheck, $125 in giftcards above. Ahhhh yeahhh! Bought my hunny some Cologne yesterday - Burberry Touch (SMELLS SO GOOD!)

You're probably thinking, "WTH is that??" It looks weird right? Haha, well it tastes great! The other night I bought some boneless ribs from the store and marinated in BBQ sauce, onions, and some garlic salt/minced garlic in the crockpot for 8 hours, and put it over a bed of brown rice and some roasted veggies. Absolutely delicious! Will post recipe soon!

Last night I got a tweet about being featured in a Top Read blogs online magazine called "The Food and Gardening Daily". How cool! Of course the best picture of the Enchiladas was from Pinterest, but I was so honored to have my blog featured, Thank you!! You can read it all here.

One of my really good friends, Jen, moved away to Dallas to be with the love of her life last weekend, so we had fun and said our good-bye's... thank goodness she's only three hours away! Work is going to be so lonely without her! :-(

Our crazy little house party we had last weekend... I'm pretty sure I'm still recovering. lol

Tuesday we had a crazy delicious BBQ lunch and learn hosted by Logitech (Thank youuuu!) I don't even know where it is from but you best believe I cleared my ENTIRE plate in under 5 minutes. SO GOOD.

This picture of an empty container that once was the home of Chuy's famous Creamy Jalapeno Ranch - proves that Scott and I are highly addicted to this sauce. My sales team used a lot of our last team builder funds and bought a crazy amount of fajitas, chips, and enchiladas for lunch on Wednesday! You can see a recap of our last team builder here.  Anyway, I brought some home and it was gone in two days? Hehe

This is me on Wednesday night, making Scott's dad a huge banquet size meal of Chicken, Bacon, and Ranch Mac n Cheese, which I posted the recipe for here. It was SO delicious that I had to sneak a few lot of bites! I was just taste testing! ;-)

I took a random vaca day Thursday to relax and rejuvenate since it's been hectic at work lately, and everything that happened Tuesday. 


Scott woke up early with a migraine, and so we relaxed, blinds closed, the entire day watching a ridiculous number of episodes of House, and it. was. amazing.

I also made our entire place smell like basil (sooo good) as a whipped up a homemade Margherita Pizza using Boboli's thin Pizza Crust which I first used last week! I'll post the recipe tomorrow! :-)


Today I'm spending my day off #2 being productive, payin' bills, cleaning, trip to the grocery store later, and gettin' ready for a new quarter at work which starts tomorrow! I finally have a normal schedule of 9-6, no more night shifts yay! :-)

Got my nails and toes done over at Pro Nail on Saturday, it was fun but I felt like the whole time I kept getting upgraded! By the time I left I was spending 55 dollars! It reminds me of this hilarious video of Anjelah Johnson on comedy central who talks about getting her nails done. So funny... definitely a must watch!

Enjoyed some Amy's Ice cream on Tuesday who sponsored a vendor lunch and learn at my work the other day. Belgian Chocolate? YES PLEASE!

Wednesday I was having a craving for meatball subs ALL day, so when I got home I knew what was for dinner! I'll post the recipe later this evening, but look at this bad boy. It was SO good!

Made some Dippy Egg Mcmuffins the morning of my interview yesterday/Thursday - which went amazing and is the reason I've kind of been in and out with blogging this past week I was preparing :-) Cross your fingers and toes!

It has been a super busy week at work getting things ready and Scott has been working late all week, so all week we've been watching TV shows, and last night we watched High Rollers, which was a good movie all the way up until the end - it's like one of those movies that has no ending. Like nothing important happens, no cliff hanger, nothing! Just credits.... weird.

Last night we weren't super hungry, and I had this craving for pizza, so I made us little appetizers, one English muffin pizza, and little whole grain wheat reduced-fat triscuits topped with laughing cow garlic and herb cheese and a little pepperoni slice on top. Laughing cow cheese and triscuits are SO good together if you haven't had it before: they cheese wedges are only 30 calories and add the perfect flavor to a wheat cracker or triscuits. It was a very light but so yummy. I am addicted to in love with English muffins.

This week I've also become addicted to making my own Iced Coffee. I grabbed the quick and easy recipe from Courtney over at Sweet Tooth Sweet Life, and the only change I made is I iced it up in my blender so it gets colder-faster. :-) Delicious!!!

Well it's my day off and I plan on working out, relaxing around the house, maybe running a few tiny errands, and possssibly a little shopping since today is also payday. :-) Ahhh yeahhhhhh!
