Bubble Up Enchiladas

This is another amazing recipe I found and had to share! I am linking up with beautiful Mrs. Mallorie for "What's For Dinner!?"

I found this recipe off of (duhh..) Pinterest!
These Bubbly Enchiladas are from the weight watchers program, and they were absolutely declicious! This is also a type of recipe that you can interchange as well - like to make Pizza, Chicken Pot Pie, etc. You can also easily add beans, corn, etc to add extra fiber and veggies! You'll see me trying that out in the next few weeks! ;-) Love me some new recipes!!

Bubble Up Enchiladas

Ingredients:
1 lb ground turkey
1 10oz can enchilada sauce
1 8oz can tomato sauce
1 can reduced fat refridgerated biscuits
1 1/4 low fat mexican cheese
(insert your fave veggies or extra ingred here)

Directions:
1. Preheat Oven to 350*
2. Brown turkey and drain if needed
3. Mix in a can of enchilada sauce/mix in tomato sauce
4. Cut refridgerated biscuits into fourths (I only used about half the can and it was just as good) and stir into the meat mixture (add any other veggies if you'd like)
5. Dump all of that yummyness into a greased casserole pan and bake for 25 minutes
6. Take out and top with the cheese, and bake for another 10 minutes.
7. Let stand for 5 minutes before serving, serving size 6-8
Add your fave toppings like salsa, chives, or light sour cream :)

This recipe was unbelievably good and look at the ingredients! Super budget friendly and easy! You know you're going to make it ;-) Scott put his in some tortilla wraps, and the next night for leftovers put it over a bed of brown rice. So yummy!

Love the idea for leftovers! I haven't bought ground turkey for a while b/c my mom always freaks me out about random recalls. Do you know if it's normal again? Guess so if you're using it, haha.
